King’s Day is coming! Exactly two weeks from now, it’s time. The flag is allowed to go out again and your orange suit is allowed out of the closet, just like the red-white and blue face paint. Because whether or not you are a fan of the King’s birthday: King’s Day and Queen’s Day are always synonymous with socialising, good food and of course a nice party during King’s Night! So whether you’re going to a party, socialising with friends or family or going to the Oranjemarkt with kids: with this dish you are guaranteed to make King’s Day a success!
Food during King’s Day: The Willem-Alexander cocktail
Traditionally, the holiday falls in the middle of the beginning of the asparage season. In 2018, the asparaper season is open on 5 April and officially runs until 24 June. In 1967 chef Herman van Ham invented a special recipe: The Willem-Alexander cocktail in honour of the birth of Prince Willem-Alexander. And what better way to celebrate the King’s birthday with his own recipe?
Ingredients
The recipe is not very difficult to make. For about 4 people you need the following:
- 500 grams asparagus
- 200 grams smoked chicken breast
- 2 dl orangemayonnaise
- 3 oranges
- 4 quail eggs
- Green spice mix
- 4 cocktailglazen
Preparation

- Start by peeling the asparagus and cut off the bottom piece of it. Boil the asparagus in lightly salted water until cooked through and let them cool completely.
- Cut the smoked chicken breast into cubes
- Bake the quail eggs and let them cool
- Peel the orange and cut the flesh loose from the fleece and into wedges
Presentation
Place the asparagus, chicken breast and orange in the glass and put some orange mayonnaise between each layer. Garnish the whole with a fried quail egg, green herbs and of course a red-white-blue cocktail stick or some orange decorations!
